8 slices Country Harvest? 100 per cent Whole Wheat and Fibre Bread
6 oz boneless, skinless, cooked chicken, finely chopped
1/2 cup finely diced celery, about two stalks
1/4 cup finely diced red onion
1/4 cup finely chopped walnuts
1/4 cup mango chutney
2 tbsp low-fat mayonnaise
1 tbsp lime juice
1 tsp margarine

Mix together cooked chicken, celery, red onion, walnuts, mango chutney, mayonnaise and lime juice. This can be made up to two days in advance.

Evenly spread the margarine over the two slices of bread.

Scoop out 1/2 cup of the chicken mixture and spread evenly over the bread. Place second slice of bread on top and gently press down. Cut in half. Serve.
